After looking at the entries and casting my vote for the Fairview Bloggers Competition, I decided to try Nina at My Easy Cooking's entry. You can view the complete recipe here as I modified it slightly to suit our dietary and financial restrictions.
Ingredients we used (to serve two hungry people!)
1 medium butternut
200g linguine pasta
1 Fairview roll camembert cheese
3 sprigs rosemary
1 green chilli (sliced)
1tsp crushed garlic (I would prefer to use cloves)
Olive oil
Salt and Pepper
Cut the butternut into bite size pieces. Roast with 2 sprigs of rosemary in a pre-heated oven after tossing with some olive oil, salt and pepper. Cook through until soft.
Cook the pasta as instructed.
Now, cut off a bit of the top of the cheese and remove. Stick in pieces of rosemary, chilli and garlic. Drizzle with olive oil and place in the oven. Do this only once your pasta and butternut are nearly ready! Cook for 5-10 minutes until the cheese is soft.
Toss the butternut with the cooked pasta and squeeze in the melted cheese. Mix well and serve.
