Deboned Chicken Stuffed with Onions, Herbs and Chillies



Tuesday night is Chicken Night! We usually roast a whole bird (sometimes two if the mouths multiply) and it's a real treat for me as this is something my mom never made. But I'm a little tired of the routine and I was secretly longing for something new. MrB, the mad man that he is, suggested we debone a chicken - coz "you know how to do that babe". Um, ok, but it's not a nice job...
So Tuesday morning before work (strangely, one week post early morning souffle project) I set out to rid this bird of all bones.... nevermind then. I haven't done this in years and it's quite the process. But 20minutes later we had a carcass and we had a deboned chicken.

Stuffing was made, chicken was rolled and we set out to cook it. MrB made a nice gravy and I cooked some vegetables and potatoes as sides. Oh my word but this was one juicy delicious chicken! I don't like the bones in a chicken and usually go for the breasts. What a delight for me not having to rush to get my favourite piece or have to navigate my meat off the bone.

It takes some effort, but we enjoyed it so much that we finished the entire thing (4 of us!). MrB wants me to teach him how to debone the chicken and then we're cooking this again THIS Friday. Wish me patience!

Stuffing
3 whole fresh chillies, chopped
6 slices of bread
2 onions, chopped finely

Mix all the ingredients and season. Place inside your chicken and roll to close. Secure with cooking string.

We grilled the chicken for about 30 minutes. The first 20minutes were wrapped in foil and then we finished it off to get the lovely colour.
