Ready Steady Cook Challenge - Starter

A while ago I (foolishly?) entered the Ready Steady Cook Challenge over at Add to Taste
What was I thinking? The other challengers know what they are doing, they cook regularly, they have exciting ideas and seem to create masterpieces out of nothing. Well MrB said I was not allowed to back down, no excuses, do it.
Since we don't really have a kitchen, I have the added challenge of having to use MrB's parents kitchen - when available. This makes it more difficult to be spontaneous and I have to plan carefully.
I was given my list of 7 ingredients by Nicola at Wot's for Lunch? who thoughtfully asked if I had any foods I didn't eat or cook with. I foolishly forgot to mention my weird orange allergy. And when my list arrived, boom! an orange on the list. I love oranges but I can't eat them so this wasn't really a "challenge" but more of a sad realization that I would not be able to taste my dish.
I liked how fresh it looked on the plate - a nice spring time lunch dish possibly?

My Starter: Baby Marrow Ribbon Salad with Citrus Dressing

Ingredients
Yield - 2 portions
1 large or 1 small Baby Marrow (Courgette or Zuchinni)
50ml Lemon Juice
1 Orange
25ml Olive Oil
Black Pepper to taste

Using a vegetable peeler, slice the baby marrow length ways to create long ribbons. Place in a small container and cover with olive oil and lemon juice (add more if required).
Season with black pepper.
Cut the orange into segments and add to the baby marrow ribbons mix


Squeeze out the juice from the remaining orange

Allow to marinate at room temperature for about 30minutes.

Arrange on a plate and serve. You can drizzle the marinade over the ribbons if you want extra flavour.
Serve!

I think this would go great on rocket leaves with toasted sunflower seeds.

After all this I had a ribbon to sample my salad and I am paying for it - I hate allergies! But it was really tasty - I hope you agree!

(PS - the red nails are completely optional! But of course, they are not at all hygienic and would never be tolerated in a proper kitchen!)
